Summer BLTA

Let’s kick this off with one of the simple joys in life.

There’s something magical about a BLTA sandwich that captures the essence of summer sunshine, and this one, with only the finest gluten free ingredients, is pure joy on a plate. The star is the bacon from Fresh Thyme Market, sorry if you don’t have one in your area. It’s honestly better than the stuff I’ve been getting from my local farmers market. Their store brand is on point. Fresh Thyme’s avocado spread is on point as well and carries the coveted “certified gluten free” emblem, (rare for a grocery chain) and a generous smear of Duke’s mayo (iykyk) and some local vine ripened heirloom tomatoes. 

It all comes together on Schär’s gluten-free multigrain bread. I had been missing this because as you certainly know if you’ve found your way here, good gluten-free bread is tricky to come by.

If the smell of a fresh tomato vine near the scent of a swimming pool could be abstractly transformed into a food this is what you would get.
